I host health gatherings monthly for my wellness business. They are laid back and always highlight a topic. Yesterday, I texted my friend to see if she would be joining us in the morning. Her response was “will you make those mini muffins again?” I laughed and said sure!
But then I realized that I hadn’t made them in awhile. I remembered the basic ingredients but couldn’t recall how much. I checked my blog and came up empty. How could I have not blogged about these? I made them just about daily last fall for my kids as a quick and nutritious part of their breakfast before school. But no blog. So I racked my memory and I think I got it right! They sure did look good…..and tasted great too! I doubled the receipe so I made 24. With none left after the meeting!
Mini Muffin Protein Receipe:
1 ripe smashed banana
1 egg beaten
2-3 scoops of Shaklee Life Protein (I like it because it’s a complete protein, has probiotics and omegas and can withstand heat when baked. It also does not contain anything artificial)
1 tsp baking powder
Any add ins you like. Today I stirred in cinnamon and chia seeds (packed with nutrition!). I have used mini chocolate chips before which taste awesome. You could stir in nuts or dried fruit too.
Mix batter together until it is wet.
Grease mini muffin cups and pour in.
Bake at 325 for approximately 12 minutes until knife comes out clean. Makes 12
